I know many of you have been there… Busy day at the office–Running late getting home.  Tired; exhausted actually.  You know everyone at home is expecting dinner.  A real dinner, not just some fast food crap.  What do you do?  Find a nice quick and easy meal.

This was my Tuesday night this week.  So on my way home, I stopped at the grocery store and picked up some chicken breast tenders and a loaf of Italian bread and continued home.  Luckily, I had all the ingredients at home already.  I had this dish prepared in under 30 minutes.

Easy Chicken

Here is what you will need:

1 lb boneless chicken breast tenders
1 cup seasoned bread crumbs
non-stick cooking spray
roasted red peppers
1/2 jar tomato sauce
1 cup shredded mozzarella cheese

Roll each chicken tender in the breadcrumbs and coat lightly.  Heat a large saute pan over medium heat.  Cook the chicken tenders for 3-4 minutes on each side until lightly browned.  Take a baking dish, and spread the tomato sauce over the bottom of the pan.  Layer the chicken tenders on top of the sauce.  Top each tender with a strip of roasted red pepper.  Spread the shredded cheese over the top of everything.  Place in the oven on Broil and cook until the cheese is melted and starts to bubble.  Serve with Italian bread.
