One of my readers requested a diabetic pound cake recipe.

2 cups flour
1/2 cup corn oil
2 eggs
3 large ripe bananas
1 teaspoon vanilla
1 teaspoon soda
1 1/2 tablespoons liquid sugar substitute
4 tablespoons buttermilk
1 cup raisins
1 1/2 cups pecans

Sift flour and soda. Add oil, sugar substitute and mix well until light. Beat eggs and add rest of ingredients. Beat until well mixed. Pour into loaf pan and bake at 350 degrees F for 25 minutes.
