Apple Cider Vinaigrette

1/4 cup cider vinegar
2 tsp Dijon-style mustard
Salt, to taste
Freshly-ground black pepper, to taste
1/4 cup olive oil

In a small bowl, whisk together the vinegar, mustard, salt and pepper. Slowly drizzle in the olive oil, whisking constantly until thickened.
