Cajun Style Onion Rings

1       Large sweet yellow onion
1/2 tsp   Salt
1       egg
1/4 tsp   Thyme
2 tsp        vegetable oil
1/4 tsp   Black pepper
1/2 cup   Dry bread crumbs
1/8 tsp.  Cayenne pepper, more or less to taste
1 tsp     cajun seasoning
1/2 tsp   Paprika

Cut onion into 1/2 inch thick slices. Separate slices into rings, leaving 2 layers of onion in each ring.
In a small bowl, beat egg and oil together.
In a shallow bowl, combine bread crumbs, and spices; mix well.
Dip onion rings into egg, then dredge in seasoned bread crumbs to coat. Fry the rings in hot oil.  Drain well on paper towels and enjoy. For a healthier version, bake these in the oven.

    I have tried this recipe many times and it is pretty good! Feel free to experiment with different spice blends.
