Green Potatoes

Don’t let the name scare you, this is a Swedish dish handed down from my grandmother. Enjoy!

6 large potatoes
3/4 cup cream
1/4 lb. butter
2 teaspoons salt
1/4 teaspoon pepper
10 ounce package of frozen spinach
2 tablespoons chipped chives
1 teaspoons fresh dill

Boil potatoes until cooked through.  Put potatoes through a potato ricer or use an electric mixer.  Add cream, butter, salt and pepper.  Beat until light and fluffy.  Cook spinach.  Drain spinach and add to the potatoes along with chives and dill.  Mix together and place in a covered casserole dish.  Bake at 400 degrees F for 20-25 minutes.

Serves 5

    tom, i loved the chinese beef with zucchini! but, what do i do with the green potatoes? boil and mash or what?I would love to try them. thanks for all your great recipes I try as many as I can.
