In a Rush? Quick Cheesy Chicken & Rice Casserole

Tonight I was in a bit of a rush, so I just threw together some ingredients I had handy around the kitchen.  The results were pretty good!

1 can cream of mushroom soup
1 1/3 cups water
3/4 cup uncooked long-grain white rice
2 cups mixed vegetables
1/2 teaspoon onion powder
4 boneless chicken breast halves
1/2 cup reduced fat shredded cheddar cheese

Combine soup, water, rice, vegetables and onion powder in a 12″x8″ shallow baking dish.
Top with chicken.  Season with salt and pepper.  Cover.
Bake at 375 degrees F for 45 minutes or until cooked.  Top with cheese.

  1. Ahhh, the venerable “cream of something” casserole. Not by any means the epitome of culinary adventures, but alwas incredibly satisfying!

  3. I think that chicken and rice combo dishes are the fastest and among the tastiest dishes to make.
